Tuna Pasta Salad *

6 cups cooked noodles (we like Barilla gluten-free rotini)
2 cans tuna, drained
2 cups frozen, thawed OR one can, drained, sweet peas
1/2 cup + spectrum canola mayonnaise 
1/2 cup shredded cheddar cheese (optional)
Salt-and-pepper to taste

Combine all ingredients in a large bowl. Refrigerate several hours to allow flavors to meld. You may need to add more mayonnaise as the pasta sits to reach desired consistency. Enjoy!
