Vanilla Sugar Cookies *

1/2 cup teff flour 
1/2 cup millet flour
 1/2 cup sorghum flour 
1/2 cup potato starch 
1/2 cups tapioca starch 
1 teaspoon xanthan gum 
1/2teaspoon sea salt 
2 teaspoons baking powder 
1/2 teaspoon baking soda

3/4 cup unrefined coconut oil 
2/3 cup sugar 
1 tablespoon vanilla extract 
1 egg

Cream wet ingredients. 
Add dry ingredients. 
Mix well.
Roll into small balls. Place on cookie sheet. Dip base of small cup into sugar and then press cookies until 1/4 inch thick.
Make sure to get cookies pony of room as they will double in size.

Bake at 3:50 for 7 to 9 minutes

Sweet and Tangy Pork Tacos *

2 pounds pork, diced
2 tablespoons olive oil 
One clove garlic, thinly sliced 
2 small bay leaves, crushed
2 tablespoons lime juice
1/4 cup frozen orange juice concentrate
1 tablespoon balsamic vinegar
1/2 teaspoon chili powder 
1/4 teaspoon cayenne pepper
1/2 tsp oregano 
1 tablespoon honey
Salt and pepper to taste

Heat olive oil in a large skillet. Sauté garlic then add pork pieces. Brown pork. Add orange juice concentrate, lime juice, balsamic vinegar, honey, and seasonings. Cook until pork is done and sauce is thick.

Serve on corn tortillas or tortilla chips. Sprinkle with sift white cheese. 

Tuna Pasta Salad *

6 cups cooked noodles (we like Barilla gluten-free rotini)
2 cans tuna, drained
2 cups frozen, thawed OR one can, drained, sweet peas
1/2 cup + spectrum canola mayonnaise 
1/2 cup shredded cheddar cheese (optional)
Salt-and-pepper to taste

Combine all ingredients in a large bowl. Refrigerate several hours to allow flavors to meld. You may need to add more mayonnaise as the pasta sits to reach desired consistency. Enjoy!

Products I Like

Barilla GF pasta: Tastes the most like wheat pasta of any of the brands I've
found so far. It cooks normally and comes in several shapes.


Resources

Many of you out there might already know some great sources of products and recipes.

My two life savers have been vitacost.com and The Healthy Gluten-Free Life cookbook by Tammy Credicott (the celiac maniac).

Where I live in Iowa we have very few sources of groceries and no bulk food stores (that I've discovered anyway). There are two main grocery stores in town, one an economy food store with little gluten-free or allergen free options, and the other with a health section which varies by location so I have to shop at the three different stores in town just to get different products that I need. This is where Vitacost.com comes in. I can find almost all of the items online cheaper than in our local grocery stores, and they come delivered to my door. Since I signed up for their set and save program I can have a shipment delivered to my house in regular intervals and I get a 10% discount on most brands. 

Credicott's book contains 200 gluten, dairy, soy, and egg free recipies.  Yes all of those things are not ingredients in ALL of the recipies!  I've always wanted to cook through a cookbook. You know, kind of like Julie and Julia, if you seen the movie. Well, here's my chance! So far every recipe has turned out very well. I would highly recommend it.

Just Some Ideas

Following the birth of our baby, and a 5 day hospital stay due to infections, we were given several delicious meals in which the chefs came up with some great substitutes.  Here are some ideas I gained from them:

Meat Loaf
Use rice, diced chilies, and black beans instead of the old tomatoes and oatmeal.

Chicken and Rice
Just use water instead of cream of chicken soup, but still get zesty flavor with red peppers and green chilies.

Salad
Make a lettuce and spinach salad.  Toss with raisins and ground peanuts.  Top with a balsamic dressing.

Pork N Apples

Following the birth of our baby one of our friends brought us this easy meal.

Pork N Apples

4 boneless butterfly pork chops
4 apples (I used golden delicious), cored and wedged
1/3 c. brown sugar
1/2 tsp salt
Cinnamon to taste

Place pork chops in bottom of a slow cooker.  Cover with apples, sugar, salt, and cinnamon.  Cook 4 hours on high or 8 hours on low.
